Moldova has for first time honey sommeliers certified according to European standards

Chisinau, July 15 /MOLDPRES/- A sensory analysis course of natural honey, level 1, for honey sommeliers was held in Moldova for the first time. The event, organized last week is addressed to beekeepers, processors and exporters of honey, as well as representatives of the HoReCa sector.


The course, organized by the USAID Rural Competitiveness and Resilience Activity, in collaboration with the National Association of Beekeepers of the Republic of Moldova (ANARM), was led by Raffaele Dall'Olio, an expert in sensory analysis of honey and an accredited teacher within the Italian Register of Experts in Sensory Analysis of Honey. 

During four days of training, the course participants studied methods of sensory analysis of honey, including recognizing and memorizing organoleptic characteristics, properties and composition of honey, origins, nutritional value, identification and correction of honey defects, as well as processing technology and causes of crystallization.


The program focuses on practical activities, testing samples to determine the quality of honey, test samples and descriptive evaluations according to EU requirements. The techniques of honey description will be applied for promotion, effective marketing, participation in honey competitions and use of honey in gastronomy.

At the end of the course, each participant has obtained a certificate recognized by the Italian Register of Experts in Sensory Analysis of Honey. The "young sommeliers" will have the skills to communicate about honey, how to market and sell it.
